Crockpot Berry Cobbler


Do you have a couple of pints blueberries from that sale at the local Try-n-Save last June still hiding out in the back of your freezer?  Here's a delicious way to use them up!

This month's Secret Recipe Club recipe was found at Heather's blog Fit Mama, Read Food.  Heather is a group fitness instructor is an example of that ol' saying, find a job you love and you'll never have to work again.  Or something like that.  Heather absolutely loves her job!  How many other people can say that nowadays?

Anyway, Heather serves her family healthy natural food.  Such as this cobbler recipe.  No weird, freaky stuff here.  Just simple, delicious ingredients.  Okay, there's sugar, but, c'mon ... dessert! 

Look at it this way, the amount of sugar per serving is relatively small.  And you were good today with that perfectly healthy dinner.  You deserve this!  And the health benefits of blueberries are greater than the quantity of sugar.  Yes.  Just keep repeating that.  In between mouthfuls of cobbler.

Crockpot Berry Cobbler
Adapted from Fit Mama Real Food
Yield: 8 servings 

cooking spray
1-1/4 cups all-purpose unbleached flour, divided
2 Tbl. plus 1/2 cup granulated sugar, divided
1 tsp. baking powder
1 tsp. ground cinnamon
1 egg, lightly beaten
1/4 cup milk (regular or 2%)
2 Tbl. vegetable oil
1/8 tsp. table salt
3-4 cups fresh or frozen blueberries (or any berry), thawed if frozen
Ice cream, or powdered sugar for garnish

Lightly spritz the bottom and sides of a 4 or 5 quart slow cooker; set aside.

In a large mixing bowl, whisk together the 1 cup of the flour, 2 tablespoons of the sugar, baking powder and cinnamon.

Use a wooden mixing spoon.
Thick batter glopped up into whisk.
In a small mixing bowl whisk together the egg, milk and oil; stir into dry ingredients just until moistened (batter will be thick).

With the bottom greased, the batter
slides around.  Just be patient.

Spread batter evenly into the prepared slow cooker and set aside.   Scrape out the large bowl, but do not bother washing it. 


In the "dirty" large mixing bowl, whisk  together the salt and remaining flour and sugar.  Add berries; toss to coat. Pour berry mixture evenly over batter.

Cover and cook on high for 2 to 2-1/2 hours or until a toothpick inserted into the cake portion of the cobbler comes out clean.


Scoop out cobbler into 8 dessert bowls.  Admire how the cinnamon made the cake portion such a lovely dark tan color.  Top with ice cream, or sift evenly with powdered sugar.  Serve warm or chilled.  But warm is better.
